Bracioles
1 1/2 lbs flank or top of the round steak
2 garlic cloves,finely chopped
1/2 cup fresh parsley chopped
3/4 cup freshly grated
Parmesan cheese
3/4 cup seasoned bread crumbs.
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
1/3 cup olive oil
Sunday Gravy
Prosciutto
(optional)
Sliced Hard Boiled Eggs (optional)
1. Lay the meat out flat on a smooth working surface.Flatten it to 1/4 inch thickness
using a mallet
or the dull edge of a meat cleaver.
2.Divide the steak into small strips for individual size servings.
3. Cover the steaks
with the garlic , parsely, cheese,bread crumbs,salt and pepper.
Add a slice of prosciutto or hard boiled eggs as an option.Sprinkle
red pepper seed
on one or two and identify as hot.
4. Roll up the steaks jelly roll fashion and tie with cotton string.
5. Heat the oil
in a large heavy skillet and brown the meat thoroughly on all sides.
This should take 10 minutes. Add the gravy and simmer for about
one hour until it is tender.
Do not overcook or it will fall apart.
6. When the meat is ready ,place it on a large serving platter,
cut the string, and serve with
the gravy poured over it.
