Fish alla Pizzaiola

Any white fish may be used if you are not a lucky fisherman or lucky enough to live next door to a skilled fisherman we are.
1 1/4 to 1 1/2 pounds fish
1 pound fresh tomatos skin on , seeds removed , chopped
1 tbsp chopped fresh parsley
3 or 4 fresh mint leaves , chopped
1 large garlic clove , finely chopped
pinch of dried tarragon
6 tbsps olive oil
1/4 cup freshly grated parmesan cheese.

  1. Place the fish in a buttered baking dish
2. Mix together all the other ingredients. Toss gently until well mixed. Spreads evenly over fish filets
Bake the fish in a pfre-heated 350 deg oven for 20 minutes until cheese is nicely meltd and tomatos are soft.
3. Serve very hot with pan drippings.
