1 lb. orzo - cooked
1 cup shredded carrot
1 cup diced radish
1 cup diced tomato or halfed grape tomatoes
1
cup diced cucumber
1 cup diced red onion or 1 cup diced scallion
1 cup frozen kernel corn
1 cup pitted kalamata olives
crumbled blue cheese
to taste
handful of parsley
dressing: white wine vinegar, extra virgin olive oil, two or three tbs. lemon juice, salt & pepper
Cook orzo
according to package directions. Do not overcook. Drain & cool. Set aside in large mixing bowl.
Assemble other ingredients
Add to orzo
Add
dressing
Sprinkle with parsley & stir
We like to drizzle the serving with olive oil and balsamic vinegar.
