Oven Baked Fried Chicken With Potatoes

1 cup buttermilk
( 1 tbsp white vinegar added to a little less than one cup milk.Let stand 5 minutes)
1 tbsp hot sauce
Legs, thighs, wings and pieces from a whole chicken. (Save breasts for another recipe)
2 cups Panko bread crumbs.
1 tbsp poultry seasoning
Salt and freshly ground black pepper

In a large bowl, mix together buttermilk and hot sauce. Add chicken pieces and turn to completely coat.
Let sit in refrigerator for 30 minutes.

Preheat oven to 350 deg

In a large zip top bag , combine bread crumbs, poultry seasoning, salt and pepper..
Remove chicken pieces from buttermilk and drain excess liquid
Place the chicken in bread crumb mixture a few pieces at a time and shake to completely coat.

Remove chicken from bag and place on non-stick baking pan.
Bake for 40 minutes until breadcrumbs are golden brown and internal temperature of chicken reaches 170 deg

Oven Baked Potatoes

Cut six wedges from each of three large russet potatoles
Place on a baking sheet
Sprinkle salt, pepper and paprika on potatoes
Drizzle olive olil
Place in oven alongside tray of chicken
Bake same temp and time.
