Chicken BLT with Avocado Mayo
BLT Chicken Cutlet Sandwiches with Avocado Mayo

Avocado Mayo

1/2 ripe avocado ,pitted
1/2 cup mayo
2 tsp lime juice
salt to taste


2 chicken cutlets (1/4 in thick)
salt and pepper to taste
4 strips bacon
2 tbsp olive oilnotes
1 baguette, cut in two( about 4 inches each0b
4 leaves romaine
2 tomato slice

Add salt and pepper to cutlets , to taste
In a skillet, render bacon until golden, over med-high heat.About 5 minutes, turn often.
Transfer to a paper towel.
Wipe out the skillet
In skillet , heat 1 tbsp olive oil
Add cutlets, cook 3 minutes until golden.
Transfer to a plate and keep warm
Add remaining tbsp olive oil to skillet.Toast baguettes cut side down for 2 minutes.
Spread cut sides with mayo mix.
On bottom piece, layer the chicken , bacon, lettuce and tomato.
Close and cut in half diagonally.
