Mashed Potatoes with Broccoli Rabe
If you haven't tasted broccoli rabe, you may not like this dish. It has a bitter taste .
1 lb potatoes, cur for boiling
1/2 cup olive oil
1/2 lb broccoli rabe, stems removed, roughly chopped
1 clove garlic, minced
1/4 tsp red pepper seeds
1 cup plain bread crumbs
Salt, to taste
Bring potatoes to a boil in a large potwith large pinch of salt
Cook until tender
Meanwhile add a tablespoonful oil to a skillet on medium heat.
Add garlic and red pepper. Cook until garlic is light brown, about one minute
Set oven at 400 deg
Remove potatoes with a slotted spoon. Add broccoli rabe and cook for about 3 minutes. Remove, drain and add to skillet with garlic and red pepper.
Mash potatoes with fork or masher. Add enough oil to moisten well.
Mash in the broccoli rabe mixture , adding more oil as needed.Sprinkle with salt and pepper.
Place mixture in 5 x 9 oven proof dish. Top with bread crumbs. Drizzle with olive oil. Bake until bread crumbs are golden brown, about 15 minutes
